Grated Carrot and Raisin Salad

Serving size: 1/2 recipe

1 medium carrot (grated)
2 TB raisins
1/2 pear or apple
1 TB red wine vinegar
2 tsp olive oil
1/4 tsp dried Italian herbs
2 TB pine nuts

Combine grated carrot, raisins, and diced pear/apple. Toss with vinegar, olive oil, and Italian herbs. Sprinkle with pine nuts.
